Ingredients
1 cup almond butter (unsweetened)
1/4 cup raw cacao powder
1/4 cup flavorless protein powder (Paleo-compliant)
1/4 cup coconut flour
3-4 tbsp maple syrup or raw honey (to taste)
2 tbsp unsweetened almond milk (adjust as needed)
1 tsp vanilla extract
Pinch of sea salt
2-3 tbsp chopped almonds or shredded unsweetened coconut (optional, for coating)
Instructions
Mix the Base: In a mixing bowl, combine the almond butter, cacao powder, protein powder, and coconut flour. Stir until well combined.
Sweeten & Flavor: Add maple syrup or honey, vanilla extract, and a pinch of sea salt. Stir thoroughly.
Adjust Consistency: Add almond milk one tablespoon at a time until the mixture forms a dough-like consistency. It should be moist but not sticky.
Form Balls: Roll the mixture into bite-sized balls (about 1 inch in diameter).
Optional Coating: Roll the balls in chopped almonds or shredded coconut for extra flavor and texture.
Chill: Place the protein balls on a lined tray and refrigerate for at least 30 minutes to firm up.
Storage:
Store in an airtight container in the fridge for up to one week or freeze for longer storage.
